Prep your ingredients; chop bacon, peel and dice potatoes in ~1cm cubes, finely dice onion, shred cheese
Heat a pot over medium low heat and addd the bacon
Once the bacon is crispy remove from pot and set aside
Add butter and onions to the same pot
Cook until onions become soft and slightly translucent
Once onions are cooked add stock to pot
Add potatoes and milk
Season with salt and pepper to taste
Let simmer on low heat, stirring occasionally, until potatoes are cooked through (approximately 25-30 minutes)
Turn off heat and add shredded cheese to soup, stir
Serve in a bowl with some cheese and the bacon bits on top
