Potato Soup with Cheddar and Bacon Bits
Growing up my mom often made soup from scratch. When I moved away for uni I wanted recipes that were easy to make and didn’t take too long. I love to bake but before uni I didn’t bother with much cooking 😬. This Potato soup is the first soup I made after moving. Its super easy to make, and I usually have all the ingredients on hand. It’s something nice to keep me warm on the rainy English days.

Potato Soup
Easy potato soup made with cheddar and bacon

Ingredients
- 2 slices bacon
- 1/2 small yellow onion finely diced
- 1 Tbsp butter
- 4 medium potatoes cubed
- 2 cups chicken stock can subsitute with vegetable
- 2 cups milk
- 1/2 cup shredded cheddar cheese
- salt and pepper to taste
Instructions
- Prep your ingredients; chop bacon, peel and dice potatoes in ~1cm cubes, finely dice onion, shred cheese
- Heat a pot over medium low heat and addd the bacon
- Once the bacon is crispy remove from pot and set aside
- Add butter and onions to the same pot
- Cook until onions become soft and slightly translucent
- Once onions are cooked add stock to pot
- Add potatoes and milk
- Season with salt and pepper to taste
- Let simmer on low heat, stirring occasionally, until potatoes are cooked through (approximately 25-30 minutes)
- Turn off heat and add shredded cheese to soup, stir
- Serve in a bowl with some cheese and the bacon bits on top
